Mediterranean Rice Bowl

This is the bowl you'll make when you want something that feels fresh without spending half an hour in the kitchen.

The combination of warm chicken, fluffy rice, crunchy vegetables and creamy tzatziki somehow tastes like a meal you'd order out—but it comes together with everyday supermarket ingredients.

Ingredients

  • 2-3 FROZN chicken patties
  • Cooked rice
  • Cucumber
  • Tomatoes
  • Red pepper
  • Red onion
  • Greek yoghurt (or use your favourite store-bought tzatziki)
  • 1 garlic clove, grated + grated cucumber
  • Olive oil

Optional

  • Kalamata olives
  • Pickled onions
  • Crumbled feta
  • Fresh parsley or dill
  • Lemon wedge

Method

    Cook or microwave your rice.

    Heat FROZN straight from frozen and slice into bite-sized pieces.

    Chop the cucumber, tomatoes, pepper and onion.

    Make a quick tzatziki by mixing Greek yoghurt with grated garlic & cucumber. (Or use a shop-bought one.)

    Build your bowl with rice first, then vegetables, sliced FROZN and a generous spoon of tzatziki.

    Finish with a drizzle of olive oil and any optional toppings you fancy.
