Giant Couscous Grain Bowl

This is one of those meals that feels like something you'd order at a café.

Warm giant couscous, crispy-edged FROZN and crunchy fresh vegetables all tossed together into one bowl. It's fresh, filling and perfect for lunch or dinner.

Ingredients

  • 2-3 FROZN chicken patties
  • Giant couscous
  • Peppers
  • Cherry tomatoes
  • Olive oil

Optional

  • Red onion
  • Mixed leaves
  • Fresh herbs
  • Kalamata olives

Method

    Cook the giant couscous according to the packet instructions.

    Heat FROZN in a hot pan until golden and crispy on both sides, then slice into thick strips.

    Chop the veggies

    Add the cooked couscous to your bowl, followed by the fresh vegetables.

    Add FROZN and finish with olive oil, a squeeze of lemon and any optional extras.

Why this works

Founder tip

Giant couscous is one of my favourite cupboard staples because it makes a bowl feel a bit more special than regular couscous. I nearly always pan-fry the FROZN for this recipe—the crispy edges are worth the extra couple of minutes, especially against the soft grains and crunchy vegetables.
