Loaded Pesto Baked Potato
Fluffy baked potato, pesto, parmesan, fresh veg and warm FROZN. Comfort food with the chicken part already done.
This is for when you want something warm, filling and comforting, but really don't feel like cooking a whole dinner.
A fluffy baked potato loaded with pesto, parmesan, fresh vegetables and FROZN on top.
I love using ready-baked frozen potatoes because they reheat in just a few minutes in the microwave. But a potato baked/microwaved from scratch works just as well when you have more time.
It's one of those meals that feels like a lot more effort than it actually is.
Ingredients
- 2-3 FROZN chicken patties
- 1 large baking potato (or a ready-baked frozen potato)
- 1β2 tbsp green pesto
- Parmesan, grated
- Handful of rocket or spinach
- Any fresh vegetables
Optional
- Greek yoghurt
- Sun-dried tomatoes
- Chilli flakes
Method
-
1Heat your baked potato until soft and fluffy. If using a ready-baked frozen potato, follow the packet instructions. For a fresh potato, microwave until tender (5-6min) or bake in the oven until cooked through.
-
2Microwave FROZN straight from frozen according to the pack instructions, until piping hot throughout.
-
3Cut the potato open and fluff the inside with a fork.
-
4Stir in the pesto and a little grated parmesan while the potato is still hot.
-
5Slice the FROZN patties into strips or chunks or serve whole.
-
6Add rocket, cherry tomatoes and any other vegetables you like. Finish with more parmesan, black pepper and a little extra pesto.
Why this works
A baked potato is already a great base for dinner.
But adding pesto, parmesan, vegetables and FROZN turns it into something much more satisfying without needing to prepare raw chicken or make a complicated filling.
You've got the fluffy potato, the savoury pesto, the fresh vegetables and the chicken part already done.
It's proper comfort food that still feels fresh and balanced.
Why youβll make this again
- Warm, comforting and filling
- Around 15 minutes with a ready-baked potato
- No raw chicken prep
- Easy to customise with whatever vegetables you have
- Pesto and parmesan do most of the flavour work
- Perfect for lunch or an easy weekday dinner

I really recommend keeping a couple of ready-baked frozen potatoes in your freezer. Mine take around five minutes to reheat in the microwave, and with FROZN, pesto and some vegetables, dinner is basically done. Such an underrated shortcut.
